Real Mango Ice cream
This recipe calls for real mangoes. You can use canned, but for a more fresh taste get a box of ripe mangoes from the Indian or Chinese food store, make sure they are ripe and sweet, and start peeling.

p.s. I'd like to thank my friend Laila for generously sharing this recipe with me.

Ingredients
1 can condensed milk
1 can evaporated milk
250 ml. of whipping cream
4-5 cups of pureed ripe mangoes or I full can mangoes 1tbsp rough cut almonds pinch of nutmeg and elaichi
1 tsp ground pistachios

Directions
Place in a shallow glass dish or pyrex and put into the freezer to set. Take out of freezer about half hour before serving so its easier to scoop. Scoop into individual dishes and serve with fresh fruit or by itself with sprinkles of almonds and pistachios on top.

Sheila Auntie's Fruit Smoothie

Strawberries are the best with this smoothie, but other berries work too.

Ingredients
A couple of strawberries
a bananaa
watermelon(seeded)
canteloupe(optional)
1 tsp strawberry syrup
1/2 cup orange juice or lemonaide

Directions
If you want it tart Mix through a blender with a few ice cubes and served with a sprig of mint or additional fruit slices in a nice tall thin glass. For an extra cold smoothie put your glasses in the freezer ahead of time to get them frosted.

Mixed Fruit Chaat

This is my mom's favorite and her attempt at getting us all to eat a little more healthier. It can be served as an appetizer or at teatime! This recipe makes enough for four people.

Ingredients

1 banana
1 peeled pear
1 peeled apple
1/2 cup diced cucumber
1/2 cup of grapes
1/2 cup of grapefruit or orange(just make sure you take the pith and peel off)
1/4 tsp chaat masala
1/4 tsp ground cumin freshly squeezed lime juice
salt and pepper

Directions
Very lightly sprinkle of sugar to give it a sweet and sour taste Serve slightly chilled. The lime juice will prevent the bananas from going brown.

Thai Mango Salad

This salad is a nice accompaniment to Indian, Chinese and of course Thai food.

Ingredients
1 Green Mango (chinese store)
1 cup bean sprouts
1 tbsp chopped mint
The juice of 1 lime
1/2 tsp sugar
1 tbsp red onion
1 tsp chopped dhania (coriander or cilantro)
sprinkle of cayenne powder salt to taste

Directions
Mix and toss. Chill and serve.

Next issue: Look forward to a great vegetarian Pad Thai Recipe to go with the Mango salad and some other oriental favorites!
